Not Your Usual (Jalapeno and Corn) Pancakes

Eric and I just had a beautiful, delicious dinner of Jalapeno and Corn Pancakes.  You can find the recipe here, originally published in the Williams-Sonoma Vegetarian Cookbook.  The recipe is a definite keeper:  not-too-crazy prep, could feed a crowd, healthy, and very filling.  My only complaint?  It actually lacked some spice!  Eric must have done too good a job seeding those jalapenos.  Next time, we’ll leave one or two unseeded or add some red pepper flakes.  I envision some delicious Bloody Mary cocktails next time we make them, too–they would be perfect to kick up the usual a weekend brunch fare.  We buy our perfect Bloody Mary mix from the Princeton Flea Market in Central Wisconsin.  And who doesn’t love a hearty, tipsy brunch?  I have big plans for our summer Sundays…
