Okay, I admit it, I’m feeling completely and utterly meat deprived. What I wouldn’t give for a hamburger…
But Eric’s still going strong with our Lenten abstinence, and so I’m willing to hold out for a few more weeks. We’re planning for a Southern-style Easter bash to celebrate our accomplishments. More on that later.

Well, perhaps it was the added pressure since I’ve had so many flops lately, or maybe soufflé just really isn’t that hard, but this recipe is a keeper. The flavors were strong enough that not everyone would enjoy it, but Eric and I felt like it had just the right amount of rich, savory components to make us glad we had enough for second helpings! I can’t wait to eat the leftovers for lunch.
