In a month of crazy, busy, rushed days, we’ve been searching high and low for easy, cheap meals. This one from my best friend Martha is a new family favorite. Basically, you just throw a couple boneless chicken thighs or breasts into a slow cooker, cover them with salsa (homemade or jarred both work great), a little garlic, chili powder, oregano and cumin, add some pureed or sliced chipotle chiles if you want a little heat, and cook for 4 hours on high. The chicken is great plain or shredded on chips or taco shells with whatever toppings we happen to have around. Amazing, easy, delicious. I promise.
