Two of our new favorite meals at the V House are awesome, easy, delicious, and Mexican inspired.
Actually, they are the same meal, prepared in different ways. Does that count?
Once every week or do, we are buying anywhere from 2 to 6 chicken breasts and slow cooking them in (1) salsa or (2) beer, along with my taco seasoning blend (cumin, chili powder, and oregano). After a few hours, they are easy to shred, beautiful, and delicious. We usually just throw whatever we have in the house (tomatoes, onions, olives, etc) on top of some corn tortillas and the shredded chicken and call it good (since we are never, ever without sour cream, this works fairly well for us).
The salsa chicken on my kitchen counter is pretty much done now, and it smells like summer and like awesome. I’m drooling.
