Eric and I are pretty notorious among our family and friends for keeping very little in our pantry or fridge. It has it’s pros and cons.

On the upside, we throw away very little food. We can see what we have. We know what needs to get eaten, and we eat it! Plus, toward the end of the week when things look especially bare, we eat even the stuff we don’t really like much. Mostly out of desperation.

I will own up to the downsides, though. We can’t really be people to wait an extra few days between shopping trips. And we often find ourselves going to the store mid-week for a few extra odds and ends.

We’ve been trying, lately, to come up with more of a happy medium. We have a few things stockpiled (things we eat a lot of, like black beans and pasta) thanks to our Costco membership. We’re trying to put more in the freezer. But somehow this last weekend it got especially bad. Everything seemed to run out at once.

So for a Saturday afternoon snack? Jane got a delicious homemade popsicle. From last summer. She seemed to like it, freezer burn and all.
