Our favorite local grocery store sells giant 3 pound bags of spinach seasonally, and when Eric saw them out during his latest trip, he couldn’t resist. He’s calling it the “spinach challenge.”
It’s actually not too big a deal for us this time around: we had side salads with leftover pasta for dinner on Monday night and big salads with blue cheese and avocado on Tuesday night. We’ll make side salads again on Thursday evening when friends come over for a simple pizza meal. Much of the rest will be used up for Eric’s lunches (he’s at home a lot more this week than usual) and maybe a smoothie or two. Whatever doesn’t get eaten will get wilted and frozen for Jane’s summer smoothies and popsicles.
It’s not a project for every week, but it’s a fun way to keep on top of our veggie intake every once in a while.
